RECIPE: Creamy Cocoa Frosting!

As much as I love to bake, when it comes to cake, I stick to the boxed versions rather than making them from scratch. I’ve yet to find a cake recipe that comes out better than Betty Crocker, plus the boxed ones are so much easier to make. However, frosting is a different story as I can’t stand the canned stuff. I’ve been making this chocolate frosting for years now, and it beats the store bought kind any day!

CREAMY COCOA FROSTING

  • 2/3 cup margarine, softened
  • 2/3 cup unsweetened cocoa powder
  • 4 cups powdered sugar
  • 3 teaspoons vanilla
  • 4 tablespoons milk

Beat the margarine and cocoa first, then add in the powdered sugar, vanilla and milk. Beat well until creamy.

Recipe: JELL-O Poke Cake!

This is a new recipe to me but one that has been around for years. My dad remembers both my great aunt and my mom making it frequently. I love desserts that are super easy and that everyone seems to love – this one has been a big hit with my family!

JELL-O POKE CAKE

Ingredients:

  • 1 box white cake mix
  • 1 small box JELL-O, any flavor (I used strawberry)
  • Cool Whip or whipped cream

Directions:

  1. Prepare cake according to package directions. Bake in a 9×13 cake pan. Cool for 20 minutes.
  2. In a small bowl, mix JELL-O powder with 1 1//2 cups of boiling water, stirring until dissolved. Add in 1/2 cup of cold water and mix well.
  3. Poke holes all over the cake. I find using a chopstick works well.
  4. Pour JELL-O slowly over the cake, making sure it is spread evenly and is soaking into the holes.
  5. Refrigerate. Serve with Cool Whip or whipped cream.
